  4. Now the fun part begins - the formation of brizols. Spread cling film over the work surface; it will become your main assistant today. Grease the film with olive or any other vegetable oil, place a piece of minced meat on it, cover it with another piece of film on top and, using a rolling pin, roll it into a thin flat cake of uniform thickness, approximately the size of a small shallow plate.
  5. Pour one ladle of the egg mixture into a shallow plate, carefully place the meat pancake on top, film side up, and carefully remove the film.
  6. In one quick, gentle motion, pour the egg mixture along with the meat pancake into the heated frying pan so that the pancake ends up on top of the omelette base.
  7. Fry on both sides, then fold in half with the meat inside and fry again on both sides, bringing the brizol to full readiness.

Cooking method

1. Salt and pepper the minced meat.
2. Add one egg to the minced meat and mix thoroughly.
3. Form 4 balls from the minced meat.
4. Break one egg onto a large flat plate. Lightly beat with a fork.
5. Sprinkle the board with flour and roll out the meat ball on it into a flat cake of the same diameter as the frying pan in which you plan to fry the brizol.
6. Place the resulting meat cake in a beaten egg.
7. Pour a little vegetable oil into a frying pan, heat it and fry the meat flatbread on both sides until browned.
8. We proceed in the same way as described in points 5-7 with the remaining three meat balls.
9. We stack the finished brizoli on top of each other.
10. Mix mayonnaise and garlic passed through a press.
11. Finely chop the greens.
12. Cut the cucumber lengthwise into thin slices.
13. Place the brizol on a plate, egg side down.

You will need:

Minced meat (pork/beef) – 3 tablespoons,
Egg (large) – 2 pieces,
Champignons (fresh) – 100-200 grams,
Cucumber (pickled) – 1 piece,
Sour cream – 1 tablespoon,
Milk – 1 tablespoon,
Hard cheese - 2 tablespoons,
Mustard – 1/2 teaspoon,
Garlic – 1 clove,
Salt, ground black pepper - to taste,
Vegetable oil - for frying,
Greens - to taste.

Cooking method:

  1. Chop the mushrooms and fry in vegetable oil until tender.
  2. Cut the cucumber into cubes or strips.
  3. Add cheese, grated on a medium grater, to the cucumber.
    4. Mix fried mushrooms, sour cream, mustard, pressed garlic with cucumbers and cheese.
  4. Now you can move on to forming the base - a meat flatbread for our brizol.

  • Premium wheat flour – 100 gr.

  • Wheat flour (high grade) – 2-3 tbsp. l.

  • Salt.
  • Vegetable oil.
  • Cheese – 200 gr. (for a more complex recipe).

Cooking algorithm:

  1. Cut the tenderloin into equal thin portion pieces-plates. Beat it using a kitchen hammer and film. Salt and sprinkle each with spices.
  2. Beat the eggs until foamy using a fork or mixer. Heat oil in a frying pan.
  3. Dip each piece into flour on both sides, then dip into beaten eggs and into a hot frying pan with oil. Fry on each side, place lettuce leaves on a plate and place pork brizoli on them. Garnish with chopped herbs.

  • Minced chicken – 300 gr.
  • Mushrooms (champignons) – 200 gr.
  • Chicken eggs – 4 pcs. (+ 1 piece in minced meat).
  • Milk – ½ tbsp.
  • Salt, spices, dill.
  • Mayonnaise – 2-3 tbsp. l. (can be replaced with sour cream).
  • Frying in vegetable oil.

Cooking algorithm:

  1. Beat eggs with milk and salt, bake 4 thin omelettes-pancakes. Fry on both sides, turn over very carefully so as not to tear.
  2. Prepare minced meat by adding eggs, salt and spices. Dill, washed and chopped, mix with mayonnaise. Finely chop the mushrooms, canned mushrooms do not require additional heat treatment, fry raw champignons in a small amount of vegetable oil.
