Preparation:

1. Let's tackle the gelatin first. To do this, pour 5 grams of it. water, mix and leave to swell.

2. At this time, cut the herring fillet into small cubes.

3. Melt the swollen gelatin in a water bath and add it to 100 g. mayonnaise. Mix and transfer this mixture into a pastry bag. We put it in the refrigerator until our salad is ready.

We will need gelatin mixed with mayonnaise to decorate the finished dish. At the end of the recipe you will see and understand why these manipulations were carried out.

4. Grate the boiled beets on a coarse grater.

By the way, when you boil vegetables, it is advisable to cook the beets in a separate bowl so that the potatoes and carrots do not turn red.

1. First of all, remove the head with an oblique cut.

2. Now we need to cut off a small part of the belly and take out all the insides of the fish.

3. After this, you need to cut off the fillet on both sides of the ridge. Using a knife, cut the flesh along the herring with smooth movements. We separate the ridge and remove it (we don’t need it).

4. Using a knife (preferably very sharp), cut off the rib bones in a thin layer. We remove those that are not cut off with our hands or tweezers.

5. Remove the black film.

6. Now you definitely need to cut off the places where the fins were. If you run your hand over those places, you will feel a compaction. That's what we need to remove.

7. And the last thing is skin removal. In this case, it comes off very easily, because we cut off everything that was holding it. You need to grab one end and with a slight movement of your hand just pull it off the fish fillet.
