Zucchini with mushrooms is a truly successful combination of products. The final dish looks like julienne, so it can be easily prepared in cocotte makers. First, all products are stewed in a frying pan with the addition of sour cream, and then baked with cheese in the oven. Among other things, zucchini with mushrooms and cheese is a vegetarian dish. Vegetarianism is increasingly becoming part of our lives, which means every housewife should have two or three vegetarian dishes in reserve to please even the most demanding guest.

Compound:

  • Zucchini – 2 pieces (young)
  • Mushrooms (fresh or frozen) - 400 g (I used champignons, but you can cook from any mushrooms)
  • Onion – 1 piece
  • Sour cream – 200-250 g
  • Cheese – 150-200 g
  • Salt - to taste
  • Ground pepper - to taste

Preparation:

First prepare the zucchini. Wash them and grate them on a coarse grater. Since we are using young zucchini, there is no need to peel them.

Peel the onion and cut into small cubes. To avoid crying while chopping onions, in addition to wetting the knife in cold water, you can put a lit candle next to it.

Heat a little vegetable oil in a frying pan and add the onion. Fry the onion until soft and lightly browned over low heat while stirring. This should take approximately 10-15 minutes.

Place the mushrooms in the fried onions and fry them over high heat for 10 minutes until the liquid has partially evaporated. If you are using fresh mushrooms, then wash them in advance and cut them into small pieces. I used pre-chopped frozen mushrooms for this dish. There is no need to defrost them; you can throw them straight into the pan from frozen.

Add pre-grated zucchini to the mushrooms and simmer the zucchini with mushrooms under a closed lid over low heat for 10 minutes.

Then add sour cream. Pre-dilute the sour cream with 3-4 tbsp. spoons of boiling water so that it does not curdle when added to hot zucchini.

Simmer the zucchini and mushrooms in sour cream for another 5 minutes.

While the zucchini is stewing, grate the cheese on a coarse grater. Then turn off the heat and add some of the cheese directly to the hot zucchini with mushrooms so that the cheese has time to melt. Thoroughly mix the zucchini with mushrooms and cheese. Salt and pepper the dish.

Our dish is almost ready, all that remains is to bake it in the oven with cheese. As I wrote above, zucchini with mushrooms and cheese can be baked in cocotte makers - this is more holiday option, or you can bake it in a regular frying pan or fireproof form.

Place half the zucchini and mushrooms in the pan and cover with half the remaining cheese.

Then place the remaining zucchini in the pan and sprinkle with cheese again.

Place the prepared dish in the oven. Simmer the zucchini with mushrooms in the oven for 20 minutes at 200 degrees until a golden cheese crust forms.

To prepare this dish, it is best to use young ones. If you use exactly these zucchini, then you do not need to peel them. Cut the zucchini into 1 cm thick slices.

Remove the skins from carrots and onions. Chop the carrots into semicircles.

Cut the onion into cubes or quarters of rings.

Wash the mushrooms. Place in a colander to drain the water. Next, cut them into not too large pieces, approximately the same as for julienne.

Place onions and carrots in a heated frying pan.

Simmer the vegetables for about 5 minutes over low heat. While stewing, do not forget to stir the vegetables so that the onions do not burn. When the carrots are soft and the onions are translucent, place the zucchini and mushrooms in the pan.

Wash the zucchini, tomatoes and carrots. Peel carrots and onions and cut into cubes. Cut the tomatoes into small slices.

Cut the champignons into thin slices. Cut the zucchini into thin half-circles. Finely chop the dill. Sauté onions and carrots. Add zucchini and mushrooms. Add salt and ground black pepper. Place bay leaf.

  • Flour – 1.5 tbsp;

  3. We wash the carrots, peel them and cut them into long, narrow strips.

  • Onion – 1 pc.;
  • Champignons – 250 g;
  • Sour cream – 100 g;
  • Garlic – 3 cloves;
  • Hard cheese (any) – 100 g;
  • Flour – 1.5 tbsp;
  • Thyme – 2-3 sprigs;
  • Ground black pepper - to taste;
  • Salt - to taste.
  • Wash the zucchini and champignons thoroughly.
  • We cut the zucchini into circles, 1.5 cm thick, and cut the champignons into 4 equal parts.
  • Pour 100 ml of water into a large saucepan (so that it covers the bottom).
  • Mix the champignons and zucchini into the pan, seasoning them with spices.
  • Cover with a lid and place on low heat for 7-8 minutes.
  • Peel the onion, finely chop it, put it in a saucepan.
  • Without covering, simmer over low heat until the vegetables have reduced in volume and the liquid has almost evaporated.
  • Add sour cream, pepper, and salt to taste.
  • After 5-7 minutes, add flour to the pan and mix gently.
  • Simmer for another 5 minutes.
  • Carefully transfer to one large or several small molds.
  • Preheat the oven to 200 degrees.
  • Finely chop the thyme and garlic.
  • Grate the cheese.
