On the eve of summer and the growing demand for vanilla ice cream "Plombir", Roskachestvo specialists checked 34 of the most popular ice cream brands. The study involved the determination of physico-chemical and microbiological parameters, the compliance of the portion weight, the presence of foreign substances in the form of antibiotics, vegetable fats and starch, which should not be part of a natural ice cream. In total, each serving of ice cream was examined for 51 quality and safety indicators.

According to the results of the study, ice cream of only 3 brands fully meets the requirements and exceeds them:

Ice cream of these brands can qualify for the Russian Quality Mark, as it does not have any flaws or deviations.

This ice cream cannot be called a sundae, it is a fake, since vegetable fats are present in the composition. Another type of ice cream "Cheerful cow" took part in the study, in which there were no vegetable fats.

Russian legislation does not prohibit the use of starch in the composition of plombir ice cream, however, this should be reflected on the packaging. In the ice cream "Sibholod" and "As it was" this information was hidden.

Warning: E. coli

E. coli was found in 2 types of ice cream:

  • Volgograd ice cream;
  • "Artek".

E. coli is a pathogenic microorganism that, when ingested, causes intestinal disorders. It can be assumed that E. coli somehow got into the product during transportation and storage, but not in the case of ice cream. Such a dessert should be stored and transported only at sub-zero temperatures, otherwise it will melt. Therefore, the conclusion is that E. coli got into ice cream due to unsanitary conditions in production or when using low-quality raw materials.

In 6 brands of ice cream, traces of antibiotics were found, but their content was within acceptable limits, in contrast to the samples above.

Most likely, not quite fresh milk was used in the production. Nevertheless, other indicators responsible for the freshness of raw materials (peroxide and acid numbers) were normal for all ice cream samples.

According to statistics, about 400 tons of ice cream are produced annually in Russia. We are one of those few countries in which ice cream is consumed not only in summer, but even in the cold season. At the same time, the most popular types of ice cream among our consumers are cream and milk, as well as ice cream.

In May 2017, as part of the food quality monitoring program, an ice cream study was conducted in the Siberian Federal District. To check the quality of ice cream, 15 cups of ice cream were purchased, made in accordance with GOST 31457-2012. For advertising purposes, the packaging of the studied ice cream indicated:

  • Without vegetable fats
  • Made from selected milk
  • Real ice cream and has a natural composition
  • Quality control at every stage of production
  • This ice cream is the best

However, according to the results of the check, it turned out that all the listed items do not apply to this product, which also turned out to be a fake. During the examination of the ice cream, the presence of fats was revealed plant origin, which does not meet the requirements of the technical regulations of the Customs Union "On the safety of milk and dairy products" (TR TS 033/2013), GOST 31457-2012. (Clause 84. It is not allowed to use the concepts "milk", "creamy", "plombir" in the name in the labeling of ice cream, which includes a substitute milk fat).

The information on the ice cream packaging was also unreliable, since its actual composition did not correspond to the declared one.

Almost at the same time Russian Institute consumer tests, four types of ice cream made in accordance with GOST in Moscow were tested. According to the results of the examination, all of them corresponded to GOST, both in terms of taste and physico-chemical. It is interesting to note that one of the ice creams tested by the institute had almost the same packaging and name with the ice cream tested in the Siberian Federal District, which is a fake.

Due to their ignorance, consumers cannot understand the true composition of some components on the package, and sometimes they do not read it at all. But this problem, unfortunately, is not the only one. Recently, cases of poisoning with expired products are also not uncommon, and most often this happens with dairy products.

In June 2017 St. Petersburg social organization consumers "Public control" tested 12 samples of ice cream. As a result, in one sample (manufactured in Nizhny Novgorod), bacteria of the Escherichia coli group were found, which indicated a violation sanitary norms in production. Such bacteria in the hot season can multiply rapidly and become especially dangerous in high concentrations for people with weakened immune systems, children, and the elderly.

  1. Choose ice cream produced only according to GOST (GOST 31457-2012), and not according to TU. Products made according to specifications may contain various additives, including vegetable and non-dairy fats (palm oil, vegetable, coconut, margarine, cocoa butter).
  2. According to GOST, ice cream can be stored for more than six months (The recommended shelf life of ice cream at a temperature not exceeding minus 18 ° C is no more than 6 months from the date of manufacture).
  3. According to GOST, ice cream, depending on the mass fraction of milk fat, is divided into: milk - mass fraction of fat 0.5% to 7.5%, cream - mass fraction of fat 8.0% to 11.5%, ice cream - mass fraction of fat 12.0% to 20.0%. According to this, when choosing a good ice cream, it is necessary to pay attention to such an indicator as fat content or mass content of fat. This indicator must strictly comply with GOST.
  4. Give preference to regular ice cream without additives and dyes. Fruits and nuts are best added at home at will and to your taste.

As part of a rolling study of ice cream, Roskachestvo specialists purchased vanilla ice creams from 34 of the most popular brands among Russians. Among them are Chistaya Liniya, Filevsky, Korovka from Korenovka, Gold Standard, White Gold, 48 Kopeks and many others. All ice creams are produced in Russia: in Belgorod, Volgograd, Vologda, Leningrad, Lipetsk, Moscow, Nizhny Novgorod, Novosibirsk, Omsk, Sverdlovsk and Tomsk regions, Krasnodar, Perm, Primorsky and Stavropol Territories, the Republic of Tatarstan, as well as in Moscow and St. Petersburg.

Once again, the test results showed that a good product does not mean the most expensive. So, for example, the most expensive ice-cream among those studied - "Chistaya Liniya" - when purchased, it cost 72 rubles per 100 grams. However, the overall score of this ice cream in the rating is 4.42. The cheapest ice cream is Russian Cold. USSR". Its purchase price was 23 rubles per 100 grams, and the overall score was 5.12, which allowed it to take 5th place in the overall rating. At the same time, the price does not guarantee the authenticity of the product: the White Gold ice cream falsified with vegetable fats is far from the cheapest of all tested samples. 100 grams of this ice cream cost 37 rubles.

The ice cream was tested for 51 quality and safety indicators, including the presence of vegetable fats, antibiotics, fat content of the product, the quality of raw milk, as well as microbiological indicators that allow detecting bacteria and pathogenic microorganisms in the product.

According to the results of the study, the ice-creams of three brands corresponded not only to the mandatory, but also to the advanced requirements of the Roskachestvo standard. Thus, ice creams "Russian Cold" (total score - 5.5 points, Moscow region), "Vologda ice cream" (5.4 points, Vologda region) and "Eskimo" (5.2 points, Tomsk region) will be able to apply for the Russian Quality Mark. region).

Violations of the law (of different levels of severity) were noted in the goods of 12 brands:

Vegetable fats are in the composition of the ice cream "White Gold" (Leningrad Region) and "Bodraya Cow" (Belgorod Region). This ice cream cannot be considered ice cream, it is a fake. Attention. The study involved another ice cream TM "Bodraya Cow", made according to the recipe of 1948 - no vegetable fats were found in it.

Also ice cream "Your ice cream" and "Ice cream from Santa Claus" does not have the right to be called ice cream, since the fat in both products is 11.5%. It's more like ice cream.

As part of the ice cream "Kak was" and "Sibholod" (both - Omsk region) starch is not indicated. The manufacturers of these products have violated consumer rights to valid labelling.

In ice cream "Artek" (Vologda region) and "Volgograd ice cream" (Volgograd region), experts found E. coli bacteria.

The antibiotic chloramphenicol was found in ice cream "Volgograd ice cream" (Volgograd region), antibiotics of the tetracycline group - in the ice cream "Lipetsk" (Lipetsk region). quantities medicines exceeded the allowable technical regulations of the Customs Union.

The actual net weight of the Selo Zelenoe ice cream (Perm Territory) amounted to 267 grams, while the declared 280 grams. The manufacturer weighed only 13 grams. But if we take into account the cost of one such ice cream - 99 rubles per package - it turns out that the consumer pays an extra 4.5 rubles.

In the ice creams "Gold Standard" (Omsk region) and "As before" (St. Petersburg), excess acidity was recorded. Most likely, stale dairy raw materials were used to make this ice cream.
