Shish kebab does not need presentation: it is popular at any time of the year, prepared from any meat and in different ways: on the grill, in the oven, in a frying pan. Among kebabs, chicken is considered dietary and delicate, and if you have to choose what to make at home, then, of course, this is it.

It is ideal to bake chicken kebab in the oven on skewers - there are many recipes, one better than the other. And it’s not about the recipes, but about understanding the peculiarities of fried chicken meat. The fact is that it is considered a bit dry, so in order to get a juicy result, different parts of the chicken are used in different cases. The thighs are more suitable for the barbecue, the wings a little smaller. But the fillet is not suitable; it is better to bake it in the oven. But even in the oven, white poultry meat will turn out dry if you do not marinate it. Another way to keep the fillet tender and full of juices is to bake it and wrap it in bacon. In my opinion, bacon is the most delicious variation of chicken kebab.

Ingredients

  • one chicken breast fillet
  • sliced ​​bacon – 200 g
  • half a lemon
  • honey – 1.5 tbsp. spoons
  • mustard with grains - 1 tbsp. spoon
  • soy sauce – 1 tbsp. spoon

Preparation

Cut the prepared poultry into small pieces and sprinkle with a little salt; if desired, you can sprinkle with black pepper.

If you bought bacon in pieces, try to cut it into thin strips/slices. It is more convenient to use bacon when it is ready-cut. Wrap each piece of fillet in bacon.


Place four pieces of fillet on each skewer; the wooden sticks do not need to be soaked or oiled.


Place the kebabs on a baking sheet, which can be lined with foil if desired.
In a small bowl, combine mustard, honey, lemon juice and soy sauce. Stir well. Pour the sauce over the chicken skewers and place in the oven for 15 minutes. Then take out the skewers with the chicken, turn them over, pour the sauce over them again and fry for about 10 minutes, the bacon should be browned. The temperature is set to 200 degrees for the entire cooking time.


While the dish is preparing, chop fresh vegetables for serving and prepare the greens with whole sprigs. If you decide to make a vegetable salad, then season it better with vegetable or olive oil. By the way, a fresh tomato salad or canned tomatoes in slices will go well with chicken skewers on skewers cooked in the oven.

Ingredients:

  • fresh chicken fillet – 3 pieces;
  • bacon – 200 grams;
  • onion – 1 head;
  • mayonnaise 5-6 tablespoons (can be replaced with kefir);
  • ground red sweet pepper (paprika) – 1 teaspoon;
  • turmeric – 1 pinch;
  • curry – 1 pinch;
  • salt and ground black pepper - to taste;
  • hard cheese – 100 grams;
  • vegetable oil - for frying;
  • wooden skewers for shish kebab.

Cooking process:

Wash the chicken fillet thoroughly in running water, and then cut into pieces, preferably square, about 2-3 cm thick.

Next, the chicken pieces need to be marinated; to do this, place the chopped fillet in a suitable deep bowl, add salt and ground black pepper to it to taste, as well as aromatic spices - turmeric, curry, ground sweet red pepper (paprika). In addition, we peel and cut one onion into thin half rings, and also add the onion to the chicken.

Now add mayonnaise to the meat, mix everything well and put our kebab in the refrigerator to marinate for 2-3 hours.

After the time indicated above, take the marinated fillet out of the refrigerator and begin stringing the kebab onto sticks. To begin, cut the bacon into small rectangular plates, 5-7 millimeters thick.

Thread a piece of chicken onto each skewer, alternating it with slices of bacon.

Next, heat a frying pan with vegetable oil and fry our kebabs on all sides until golden brown over high heat (not until fully cooked).


Then transfer the skewers into a deep baking dish. Ideally, it is desirable that their ends lie on the edge of the form, and the kebab itself does not touch the bottom of the form. Place the kebabs in the oven for 20 minutes, cook at 200 degrees.

When the dish is almost ready, take it out of the oven, sprinkle grated cheese on top, and bake again for literally another 1-2 minutes so that the cheese gets a crust.


Serve ready-made chicken skewers with bacon and cheese crust with baked or boiled potatoes, as well as any sauce, such as adjika or ketchup.


Despite the speed of preparation, the main thing is not to forget that marinating requires additional time. If there are a large number of dishes on the holiday menu, then it is more practical to marinate the meat the evening before.

One of my favorite summer memories is spending time with friends and family in nature. And of course, the kebabs... Easy to prepare and you can create your own creations on the spit... you can use any kind of meat and vegetables, and even fruits.
A quick summer kebab, of course, chicken. Depending on what season it is, various vegetables and mushrooms can be used in combination with chicken. To make the kebab juicier, wrap the chicken pieces in bacon. If you cook chicken kebab without bacon, it is better to use chicken thighs; they are not as easy to overcook as chicken breasts. The marinade of soy sauce, honey and garlic gives the chicken a delicate, spicy taste.

  1. Prepare the marinade. In a large bowl, mix soy sauce, vinegar, honey, oil and minced garlic. Check for salt, remember that soy sauce is salty.
  2. Cut skinless and boneless chicken fillet into pieces, but not small, so that the meat remains juicy when frying.
  3. Cut the bacon in half.
  4. Cut vegetables into arbitrary pieces.
  5. Place chicken pieces and chopped vegetables in the marinade and season with ground black pepper. Mix all this, cover with a lid and marinate for at least 1 hour. An excellent kebab is obtained if you marinate the chicken for 4 hours, then add all the other vegetables for 1.5 hours.
  6. After preparing the heat (coals), wrap the chicken pieces in strips of bacon and thread the meat and vegetables, alternating them, onto skewers. Cook for 15-20 minutes, occasionally pouring the remaining marinade over the kebab and turning over.
